Using Old HP Printers in Ubuntu

Issues installing HP printers in Ubuntu 16.04 (and derivatives)

Recently trying to install an HP OfficeJet G85 on Mint 18, I had no luck using the system's printer tool (CUPS). I could see the device with lsusb, but CUPS didn't recognize the device (and hplip was already installed).

Eventually I installed hplip-gui, and ran the "HP Toolbox" app which allowed me to discover and add the printer. I'm documenting this in case anyone else runs into this issue--since I couldn't find any solution online.
